The science
Finely ground coffee rests in the upper chamber. Hot water moves through it by gravity and collects as a strong decoction below. Level the grounds gently with the insert; do not tamp hard. The decoction can become a milk coffee, a longer black cup or an iced drink. Start with the recipe for your filter size and adjust the grind if the drawdown is too fast or too slow.

Common questions
What grind size should I use for a South Indian filter?
Aim for a fine grind, around 20 on Pourrr’s 0 to 100 scale. If the brew runs fast and tastes thin, go finer; if it stalls or turns bitter, go coarser.
What coffee-to-water ratio works best for a South Indian filter?
Around 1:5.6. Add water for a lighter cup or hold back for more strength.
How hot should the water be for a South Indian filter?
Around 95 °C. Hotter water extracts faster, so ease it down if the cup turns harsh and up if it tastes flat.
